Homemade Marinade

I love to cook and I love to marinate my meat for a few hours or even a day before I cook them. I use this marinade in everything including white rice to give it an extra kick of flavor along with my homemade Spanish seasoning. This is also great in beans, potatoes and anything you can imagine and best yet, it’s made with peppers, onions, cilantro and more and with it being blenderized, the kiddos won’t even notice.

Ok let’s get started

Grab yourself some clean, empty jars with lids and ones that are freezer safe, as you will have a lot made and want to store some for later use or when you’re almost done with the jar of marinade you’ve been using, you take one out of the freezer to thaw out.

Recipe:

  • 3 large green bell peppers
  • 2 large red bell peppers
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • 1 bunch of cilantro
  • 1 bunch of culantro (Usually found in farmers markets or ethnic locations – can be omitted, use an additional bunch of cilantro in its place)
  • 1 blub of garlic (If you love garlic you can add as much as you like. I tend to add more than a bulb.)
  • 1 large red onion (Can use a sweet onion instead)
  • 1/2 lb. of ajicitos also known as aji dulce (small sweet peppers usually found in ethnic locations or at farmers markets) – Note: If you cannot find these you can omit them from the recipe.

You do not need to de-seed these but you can if you would like, the blender will blend the seeds down but that is your choice. Peppers however, will need the stems taken off and thrown in the compost bin.

Wash and dry all your ingredients, cut all items in smaller pieces, then place them in the blender, DO NOT keep the blender going till it becomes a smoothie as you want some sort of chunkiness to the marinade or even a slight chunkiness but not a smoothie consistency.

Once you are done blending all your ingredients, place them into the jars and secure the lids tightly and keep one in the refrigerator for using right away and others in the freezer for later use.
